On our server, here is how I installed it.
sudo adduser --system --home /srv/etherpad/ --disabled-password etherpad
sudo chown -R etherpad:nogroup /srv/etherpad/
sudo apt-get install node-sqlite3
cd /srv/etherpad/ sudo -u etherpad bin/installDeps.sh
